I had lunch one day last week with my friend Judy. She told me that her mother, Peggy, was a reader of my blog, but that she was wanting some recipes for sugar free desserts. I’m been thinking about Peggy and her request all week, wondering what I could make that would be both a yummy dessert and sugar free at the same time. I hope I’ve found a recipe that will do it all. I’ve had the recipe in my notebook for quite some time, and I believe it came from a recipe swap at a Weight Watchers meeting.
Lemon Pie (Sugar Free)
3 cups low fat milk (1% or 2%)
2 boxes Sugar Free instant Vanilla Pudding mix (1 ounce each)
1 pkg. Crystal Light drink mix – lemon flavor
1 (8 ounce) container Cool Whip
2 prepared reduced fat graham cracker pie crusts
In a medium bowl, whisk pudding mix with 3 cups milk until thickened and smooth. Add an individual packet of Crystal Light drink mix to the pudding mixture; fold in Cool Whip, mix until blended. Divide the filling between the two crusts, chill. If desired, garnish with lemon slices.
