This morning I went to the seafood market. I bought shrimp for the Acapulco Style Shrimp Dip that Henry made for us when we were in Nacogdoches for the Blueberry Festival last weekend. I needed to get an early start because nothing moves too fast while on vacation, and I knew I’d need the shrimp later in the day.
I also got a bag of this shrimp boil. I liked the name.
Acapulco Style Shrimp Dip
1 pound cooked shrimp
1/2 cup fresh lime juice
3/4 cup ketchup
1 to 2 tablespoons hot sauce
1 teaspoon Worcestershire sauce
1 tomato, seeded and diced
1/2 small white onion, finely diced
1/2 cup (loosely packed) chopped cilantro, plus a few sprigs for garnish
1 ripe avocado
I didn’t get around to making the dip until afternoon. There was too much going on today. Tiffany and Daniel went kayaking this morning, and Susan and I went to Foley to the outlets to shop for a while. Finally I got around to making the long awaited shrimp dip. Besides the shrimp, the fresh ingredients that are needed are limes, tomato, onion, cilantro, and avocado.
The packaged seasonings are ketchup, hot sauce, and Worcestershire sauce.
I started by boiling my shrimp with the Slap Ya Mama seasoning for 4 minutes. I iced it down, then peeled it.
By the time I got it all peeled, my fingers were numb from the ice, but I knew I’d soon forget that with one taste of the dip.
Next, I chopped the shrimp in small pieces. Put the chopped shrimp in a large bowl. I reserved a few whole shrimp for garnish.
The recipe calls for 1/2 cup fresh lime juice, so several limes have to be squeezed. This condo we’re staying in doesn’t have a lime juicer, so I squeezed them by hand. Pour the lime juice over the chopped shrimp. Then add the ketchup, hot sauce, and Worcestershire sauce. Mix well.
Then I chopped 1/2 of a small white onion.
And I chopped 1 whole avocado.
And I chopped 1/2 cup of cilantro.
Somewhere along the way I also chopped a tomato, because I can see it in this picture with all the other ingredients.
In the bowl with the chopped shrimp mixture, mix all ingredients gently together.
Transfer mixture to a serving dish and garnish with whole shrimp, lime slices or wedges, and cilantro sprigs. Serve with chips. That’s what I did. The Acapulco Style Shrimp Dip is already gone. It was wonderful! The bowls are in the dishwasher.
