I’m in Texas at my sister’s house this weekend, and I have been enjoying cooking with her today. We made some yummy appetizers, Bacon Wrapped Pineapple Bites. These were quick to put together and were tasty little morsels.
Bacon Wrapped Pineapple Bites
1 pound bacon
1 (20 ounce) can pineapple chunks, drained
1 cup brown sugar
Wooden skewers or toothpicks
Soak skewers or toothpicks in a dish of water.
Preheat oven to 375 degrees F. Cut the bacon slices in half.
Put the brown sugar in a shallow bowl and dredge each half slice bacon in the brown sugar.
Take one pineapple chunk, place on one end of a bacon slice and roll up. Secure with a toothpick.
After all pineapples are rolled, sprinkle remaining brown sugar over the top.
We baked them on a broiler pan sprayed with nonstick cooking spray for 20 minutes at 375 degrees F. They could also be baked on a rack on a baking sheet, just something that will keep them up out of the juices that are released. After baking, crank up the broiler and broil for 3 minutes – but no longer – so the brown sugar doesn’t burn.
These Pineapple Bites are such tasty little appetizers.

These look great! I'm for anything that's wrapped in bacon. And, I love bacon and brown sugar together. I'll have to give these a try over the holidays. Thanks for sharing on Sweet Indulgences Sunday.
I found this on Pinterest. Looks delicious!!! I am thinking I could bake ahead, refrigerate, and then do the broiling right before serving. Your thoughts?
Jenny, I have not tried them this way, but it sounds like it would work. To make them up ahead of time I think you could also wrap the pineapple in bacon then refrigerate them until you are ready to bake, add the brown sugar then or even spinkle it on before putting under the broiler. Let me know how it works because doing ahead is always a plus!
This looks like such an awesome recipe!! I would love for you to stop over and check out my tutorial today for Bacon Roses! They turned out so nicely…and my hubby gobbled them up when I made them for our anniversary. =) How I love foodie fun! http://www.thebetterbaker.blogspot.com/2013/03/bacon-roses-tutorial-is-here.html
I found these on pinterest and made them last night for a birthday party–huge success, they were all gone–quickly!
YUMMM—- hit at a birthday party1
I am making these tomorrow for our Christmas Eve! Cannot wait!
Making these tonight for a NYE party! Can't wait!
Do you think that pretzel sticks would work instead of toothpicks, or would they get too soggy?
Jenni, I'm always up for experimenting, so you might try a few and see. My biggest concern is that the pretzel stick would break when trying to push it through to skewer everything together. I would love to hear if you have success with this.
My daughter is making a sample batch right now to make sure that she likes them enough to bring to a super bowl party tomorrow. I'm sure they will be delicious, but lucky us, we get to try them today. Yum
Do you think fresh pineapple would work just fine?
Jeff, I think fresh pineapple sounds WONDERFUL! Can't think of why it wouldn't work. Go for it!
They were a hit, highly requested now. My daughter is in the kitchen making a double batch to bring to a party today. Thanks so much for sharing your recipe.
Yay! So glad they were loved. It's hard to find anyone who doesn't like these!
How would I reheat them?
Laura, I've never had any left over, lol! You might try under the broiler for a couple of minutes, that's what I would try first.
Roughly how many will one batch make?
One batch for me depends on how many slices are in the pound of bacon x2, since the bacon is cut in half. Usually a batch ends up being around 24 – 28 little appetizers.
Jenny, Did that work?
