These muffins could almost be put in the dessert category. They are a real treat, a light and cake-like quick bread filled with chocolate chips and marachino cherries. These little delights are impressive at brunch, and they make a tasty breakfast or snack.
2/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
2/3 cup milk
1/2 cup canola oil
2 teaspoons almond extract
1 cup halved maraschino cherries
1 cup semisweet chocolate chips
Preheat oven to 350 degrees F. Line a mini muffin pan with paper liners.
In a bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, beat together the eggs, milk, oil, and almond extract. Add to dry ingredients and stir just until moistened. Fold in the cherries and chocolate chips. Fill paper lined muffin cups with batter. Bake for 15 – 20 minutes, or until a toothpick comes out clean. Cool for 5 minutes before removing to a wire rack. Makes about 40 mini muffins.
