I have been away from home for a couple of days with my daughter Angela. We drove to Tulsa on some business on Thursday, then got back to Little Rock late Friday just in time to prepare dinner for the family. We made these Easy Fish Tacos, and had a tasty dinner that the children loved on the table in a very short time.
We used Schwan’s catfish fillets that were nice and crispy and baked in 25 minutes. They need to be torn in pieces for the tacos.
This is the dressing we used, and it is super for fish tacos.
This meal was on the table in only about 30 minutes; it was fast, healthy and delicious.

Fish tacos are one of my favorite meals. I've never heard of that dressing before…it sounds like the perfect complement to fish tacos. YUM!

Gina, These were made with a bag of Schwan's frozen catfish fillets that were ready to bake. Very crispy plus quick and easy.

I love your site and have used quite a few recipes and just altered them to be gluten free. I just have a comment and suggestion I'd like to share. I make easy fish tacos also…I use a couple pieces of cod or mahi mahi from Whole Foods or Trader Joes and prepare similiarly but mine are not breaded. You mentioned this as a "healthy meal". It'd be much healthier with fish that's not been farmed and is not breaded and just as yummy!

Thanks, Roxanna! So glad you enjoy the recipes. You are so right about the fish, that would increase the health benefits of the meal. Many of my recipes don't take into account any special circumstances, so glad you have been able to modify and still enjoy.
