Jalapeño Corn Casserole
1 cup rice
1/2 cup butter
1 onion, chopped
1 green pepper, chopped
1 cup chopped celery
1/4 teaspoon salt
2 tablespoons sugar
2 (14.75 ounce) cans cream style corn
1 cup shredded mild cheddar cheese
2 jalapeño peppers, chopped
Prepare rice according to package directions; set aside.
Preheat oven to 350 degrees F. Prepare a 9 x 13-inch baking dish with nonstick cooking spray.
Melt butter in a skillet; saute onion, green pepper, and celery. Combine the cooked rice and sauted onion, green pepper, and celery in the prepared baking dish. Add salt, sugar, corn, cheese, and jalapeño peppers; mix well. Bake in preheated oven for 40 – 45 minutes.
Chop onion, green pepper, and celery; saute together in butter.
Mix rice, onion, green pepper, celery, salt, sugar, corn, cheese, and jalapeño peppers together in prepared baking dish. This will make a nice big casserole to serve a crowd, and if you need to stretch it a little farther, just add an extra can of corn.
Bake at 350 degrees for 40 – 45 minutes.

Now, that's a good recipe! It reminds me of a cross between some of my favorite things-corn dip and broccoli rice casserole. I'm definitely going to give this one a try. Thx for sharing.

Love this casserole. Takes me back home to Louisiana! I grew up eating something similar so I can't believe I haven't made it. Thanks for sharing this recipe!

When I saw the title, I thought this was going to be a cornbread type casserole. I really like the rice in this. Sounds delicious!

Is the 9×13 pan size correct?
Anita Rowe Stafford says
Hi Missy, Yes, the 9×13-inch casserole dish is the right size for this recipe. I re-measured the dish in the photo to be sure, and it is 9×13. This casserole is a good one for a crowd! I hope you enjoy it.
Missy says
I'm astounded because the casserole dish in the picture isn't oblong like a 9×13 is shaped. it appears to be closer to a 9×9. Thanks for your prompt reply!
Anita Rowe Stafford says
Hi Missy, The dish may look smaller due to my lack of photography skills. I added a couple of photos at the end of my original post so you can see the dish size. I think a 9×9-inch dish wouldn't hold all the ingredients in this recipe. Happy Thanksgiving!
Missy says
Oops! Quit too soon! I wish for you and yours a lovely Thanksgiving Day complete with many blessings to count!
Missy says
You went to extra trouble about the pan size! I do thank you but I did believe you without the need for extra proof! Made your recipe and it is a keeper!
Anita Rowe Stafford says
Thank you, Missy! I'm so glad you like the recipe. I didn't make it today, but I love it. I made the hash brown potato casserole today, it's always requested here.
