This is a colorful side dish that is tasty and low in calories. The vegetables are all fresh and need to marinate for 24 hours before serving, so this is a make ahead dish.
Marinated Vegetables
Veggies
1 large cucumber, thinly sliced
1 medium-sized red bell pepper, thinly sliced
1 cup thinly sliced red onion
1 medium-sized zucchini; halved lengthwise and cut into 1/2 inch wide strips
Marinade
1 cup Balsamic vinegar
1 teaspoon olive oil
4 packets Splenda (or 2 1/2 tablespoons Splenda granular)
1 cup water
Salt and pepper to taste
Begin with the vegetables.
Slice the cucumber, pepper, onion, and zucchini. I used two small zucchini in place of one medium.
Combine all vegetables in a large bowl.
Then assemble the ingredients needed for the marinade.
Marinade ingredients are Balsamic vinegar, olive oil, Splenda, and water.
Combine these ingredients in a separate bowl.
Pour the marinade over the vegetables. Season the vegetables to taste with salt and pepper.
Cover and marinate in refrigerator for 24 hours before serving. This is a healthy and delicious side dish.
