These tiny, tasty, Mini Blueberry Muffins were another one of the bake sale items that I made for the VA hospital in Little Rock this past week. I didn’t get pictures of everything that I baked, but I did snap some of these miniatures. The recipe for these muffins is found in the 500 Best Muffin Recipes cookbook by Esther Brody. Another muffin that I baked for the sale was Cream Cheese Cranberry Muffins.
Mini Blueberry Muffins
2 cups packaged baking mix (like Bisquick)
1 tablespoon sugar
1 egg, slightly beaten
2 tablespoons butter, melted
3/4 cup milk
1 cup blueberries
Cinnamon-Sugar Topping
1/3 cup sugar
1 1/2 teaspoon cinnamon
1 tablespoon butter, melted
Preheat oven to 400 degrees F. Prepare a mini muffin pan with paper liners or by greasing muffin cups. In a large bowl, combine baking mix and sugar. In a separate bowl, combine egg, butter, and milk. Add to baking mix all at once and stir just until moistened. Gently fold in blueberries. Spoon batter into prepared muffin pan. Prepare topping by stirring sugar, cinnamon, and butter together. Sprinkle over batter and bake in preheated oven for 10 minutes or until golden brown.
Spoon the batter into the prepared muffin pan.
Sprinkle the batter with the Cinnamon-Sugar Topping.
Bake muffins for 10 minutes.
These little muffins were delicious. I think dried blueberries would also be a great choice for this recipe.
