This recipe is a great one to bake ahead if you are having guests for breakfast, or it also makes a good snack anytime with coffee. After the bread is baked, the topping is poured on while the bread is hot.
Orange Blueberry Bread

2 tablespoons butter
1/4 cup boiling water
1/2 cup orange juice
3 teaspoons grated orange zest
1 egg
1 cup sugar
2 cups all purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup blueberries
Topping
2 tablespoons orange juice
1 teaspoon grated orange zest
2 tablespoons honey
Bring to a boil, until butter is melted. Stir orange juice and orange zest into the melted butter mixture, and set aside.
In a separate bowl, combine flour, baking powder, baking soda, and salt. Whisk dry ingredients together. Add dry ingredients to egg mixture alternately with orange mixture. Fold the blueberries into the batter. Do not thaw the blueberries if they are frozen. Pour batter into prepared loaf pan. Bake in preheated oven about one hour and 10 minutes.
The orange aroma and flavor along with the blueberries share the spotlight in this bread. The whole kitchen smells good while it’s baking.
