I baked cookies today, and they are made with some very wholesome ingredients. Not only are they sweetened with honey, they contain whole wheat flour, wheat germ, orange juice, and orange zest. These cookies are so full of flavor, I don’t think the children will notice the healthy ingredients.
The recipe for Orange Coconut Drop Cookies was adapted from a little specialty cookbook Wholesome Cookies by Jane Marsh Dieckmann.
I like to bake cookies on parchment paper. I sprayed the paper lightly with nonstick cooking spray because the original recipe called for a greased cookie sheet.
This recipe makes a small batch of cookies – there were only 21 cookies in the entire batch.

These sound wonderful! How nice that they have no sugar, just honey. I never used to like coconut, but recently I have tried a couple of things with it that I really liked.
