I had plans to make these muffins about two weeks ago. I bought the orange yogurt for the recipe, and one thing led to another until today I looked in the refrigerator, and the yogurt was nearing expiration. So today became the day the muffins got baked. My recipe is adapted from the Better Homes and Gardens site, recipe.com. I have added toasted pecans to my muffins, because that’s the way I like them.
I like to use paper liners when I bake in a mini muffin pan because it makes the clean up quicker and easier.
Let the muffins cool before you add the glaze. They’re good without the glaze, too.

i am making these right now, and i am thinking they would be good with dried cranberries cooked in. i don't have any on hand (and my kids probably wouldn't like them), but that might be a good thing to try sometime!
