Parmesan Crusted Chicken
1/2 cup real mayonnaise
1/4 cup grated Parmesan cheese
4 boneless skinless chicken breasts (about 1 1/4 pounds)
4 teaspoons Italian seasoned bread crumbs
salt and pepper to taste
Preheat oven to 425 degrees F. Prepare a sheet pan by lining with parchment paper. In a small bowl, combine mayonnaise and Parmesan cheese. Place chicken breasts on prepared sheet pan. Spread mayonnaise mixture on top of chicken. Sprinkle bread crumbs evenly over mayonnaise. Season as desired with salt and pepper. Bake in preheated oven for 20 minutes or until chicken is cooked thoroughly.
Spread the mayo and cheese mixture on top of the chicken breasts.
Bake for 20 minutes, and with the parchment paper there’s not much clean up.

I've had Parmesan chicken, but not with the mayo. You know I'm a Southern girl, and we love our mayo. I'll have to try this one day because it sounds delish! Thanks for coming to my party and sharing this great recipe for others to try!

This was a favorite at our house when my children were young. They're all grown now but they cook it at their houses too. I actually got it from their grandmother…so that's 3 generations and a 4th generation is eating it now! LOL!
