Living in the South, I grew up on fried chicken. I love the crispy crunch of fried chicken, but I don’t make it too often any more. We still eat a lot of chicken, but not so much of it is fried now. Today’s recipe is a crispy crunchy baked chicken (that looks like fried) called Ranch Chicken.
This recipe for Ranch Chicken was adapted from Busy Woman’s Quick and Easy Recipes.
Ranch Chicken
1/2 cup parmesan cheese
1 1/2 cups crushed corn flakes
1 (1 ounce) packet dry ranch-style salad dressing mix
4 boneless, skinless chicken breasts
1/2 cup (1 stick) butter, melted
Preheat oven to 350 degrees F.
Combine the parmesan cheese, crushed corn flakes, and dry ranch dressing mix in a bowl. Melt the butter in a separate bowl.
I used 4 boneless, skinless chicken breast halves, then I cut those in half to make the pieces smaller for baking. Rinse and dry the chicken pieces.
Dip each piece of chicken in the melted butter . . .
. . . then dredge in the corn flake mixture . . .
. . . and place on a baking sheet. Bake uncovered for 50 minutes or until golden brown.
Ranch Chicken is so easy AND so good.

How do you make it so that the breading stays on the chicken? Mine ends up soggy on the bottom w/ half of the coating on the pan.

That's not good! Be sure to dry the chicken before dipping it in the butter. The cornflakes can be crushed in a food processor, and it all sticks pretty well. Bake it uncovered. If your chicken pieces are thick, bake longer. Sorry it didn't turn out well for you. It's really good when it turns out well.

Has anyone tried this with panko breadcrumbs instead of cornflakes?

Jenn, I haven't tried Panko, but I think that is an excellent idea! I have another similar baked chicken recipe that I like,Parmesan Crusted Chicken, and it uses Italian Bread Crumbs. I'm going to give your idea a try! Thanks!
