Because I love dessert of all kinds, plus I love to bake, there is always a ready supply of goodies at my house to satisfy my sweet tooth. But the calories, oh my, the calories. This recipe is one that I don’t have to feel guilty about making because it’s a sugar free dessert. Everyone at my house loves this pie, and I don’t think they can tell the difference between this and a high calorie creation.
This pie is a cool summer dessert, and it makes a great take-along for a pot luck.
And for a double delight, this recipe makes two pies.

This sounds so good … I love white chocolate! You could incorporate any pudding flavor in this recipe, couldn't you?! It reminds me of a coconut pie I made a long time ago … alot like yours here, only I used coconut pudding but added extra cool whip on top with lots of toasted coconut! I honestly haven't made that one in ages, so thank you for sharing this one, which I'm definitely going to try! Hi Jo Beth, So happy to hear you enjoyed the pie! I believe this recipe originally came from a Weight Watchers meeting, and I don't have the nutritional value for a slice. Some sites that I have been told will calculate the values are NutritionData and SparkPeople, but I have not tried them. I always think of this pie as "guilt free".
